Ingredients:
- 1 kg carrots, grated
- 500 ml whole milk
- 250 g sugar
- 100 g ghee (clarified butter)
- 2 tbsp raisins
- 2 tbsp cashews, chopped
- 2 tbsp almonds, chopped
- 1 tsp cardamom powder
Instructions:
- Heat the ghee in a heavy bottomed pan over medium heat.
- Add the grated carrots and sauté for 5-6 minutes until they soften slightly.
- Add the milk and sugar, and stir to combine.
- Reduce the heat to low and simmer for 30-40 minutes, stirring occasionally, until the carrots are soft and the mixture has thickened.
- Add the raisins, cashews, almonds, and cardamom powder, and stir to combine.
- Cook for an additional 5-10 minutes until the mixture becomes thick and begins to leave the sides of the pan.
- Serve hot or cold, garnished with additional nuts if desired.
