Gajar ka halwa is a traditional Indian dessert made with grated carrots, milk, and sugar. Here’s a recipe you can try

Ingredients:

  • 1 kg carrots, grated
  • 500 ml whole milk
  • 250 g sugar
  • 100 g ghee (clarified butter)
  • 2 tbsp raisins
  • 2 tbsp cashews, chopped
  • 2 tbsp almonds, chopped
  • 1 tsp cardamom powder

Instructions:

  1. Heat the ghee in a heavy bottomed pan over medium heat.
  2. Add the grated carrots and sauté for 5-6 minutes until they soften slightly.
  3. Add the milk and sugar, and stir to combine.
  4. Reduce the heat to low and simmer for 30-40 minutes, stirring occasionally, until the carrots are soft and the mixture has thickened.
  5. Add the raisins, cashews, almonds, and cardamom powder, and stir to combine.
  6. Cook for an additional 5-10 minutes until the mixture becomes thick and begins to leave the sides of the pan.
  7. Serve hot or cold, garnished with additional nuts if desired.
